World's best - Kvæfjord Cake

This lovely cake is called the "world's best" of a part of us and "Kvæfjord cake" of the rest. Regardless of the name, this is a wonderful cake recipe with meringue, vanilla cream and almonds. It has been voted the Norway national cake of Nitimen listeners. Try it and decide for yourself!

World's best - Kvæfjord Cake

Cake Base
150 g Butter
125 g sugar
150 g flour
1 teaspoon baking powder
5 egg yolks
5 tablespoons whole milk

5 egg whites
180 g sugar
100 g chopped almonds

1 package Vanilla Cream ( 5 ml )
2 cup Whipping cream
2 teaspoons vanilla


     1. For this recipe the world's best 'll need a roasting pan , about 25x35 cm . Preheat oven to 175 ° C.

2.Begynn with cake base . Cream butter and sugar until it is light and airy. Separate egg whites from yolks . Take care of both parts of the egg. Add the flour , baking powder , egg yolks and milk. Cover the roasting pan with baking paper and spread the dough in it.

3 Whisk the egg whites so first half stiff consistency. Then add a little and a little sugar until it is completely rigid . Divide the mass of the dough and sprinkle the almonds . Bake in oven for about 30 minutes. Leave to cool .

4.cut cake into two equal parts . Add one part of the pie dish with meringue side down. Mix the whipped cream and vanilla in vanilla cream and cover the cream on the bottom with a spatula. Place the other cake on top portion with meringue side up.

Tips# 1: The world's best ( Kvæfjord Cake ) also tastes very good if you replace vanilla cream with rum cream .# 2: Meringues are stickier if you whip the icing sugar / sugar to finish and add a small teaspoon mild white vinegar . The vinegar will not appreciate the taste of the meringue .
